Easy Microwave Fudge

I do not like the fact that when I make a batch of fudge, the mixture turns out crystalized because I inadvertantly did not cook the mix long enough. This recipe will be appreciated by those of you who are ambitiously lazy like myself (always trying to find new ways to perform the same job, but with less effort).

- 1 - 36 oz. Package of Nestle's® Tollhouse Morsels (semi-sweet) or 3 - 12 oz. packages.
- 3 - 14 oz. cans of Eagle Brand® sweetened condensed milk
- 1 - tsp Vanilla extract
- 1 pkg of Chopped nuts (equal to two cups)

Spray cooking oil in the bottom of a 9 x 13 casserole dish, set aside.
In a large 2-3 qt microwave-safe glass bowl, empty your package of Nestle's® Tollhouse Morsels and the three cans of Eagle Brand® sweetened condensed milk. Microwave on High, for 6 minutes. Remove from the microwave, and stir. The chips should be softened enough so that upon stirring, the mixture should be very soft, silky smooth in texture. If it is not, then place it back in the microwave for another minute until you can actually be able to have that smooth consistency (due to the fact that microwave ovens vary, multiple microwavings may be necessary).

Mint Flavored Fudge: Substitute 12 oz of the chocolate morsels with a 12 oz package of York® Peppermint patties.
Caution: Chocolate does NOT require high heat to melt, so your goal is NOT to get the mixture too hot, as it could affect the overall flavor of the chocolate.

Once your mixture is soft and silky smooth, then use an electric mixture to blend the contents well (multiple microwavings may be necessary to achieve the right consistency in texture). Finally, fold in the chopped nuts, then pour mixture into your prepared dish and allow to cool thoroughly (placing in the refrigerator will expedite cooling).
